We have been on a quest for the perfect sweet potato fries with crisp edges and tender centres. Dont skip any of the steps and give them the time they need to cook. Air-fryer, or at least fan-forced oven, makes a huge difference.

2 sweet potatoes large
2–3 tbsp oil
2 tbsp cornflour cornstarch, about 1 tbsp per large sweet potato
salt to taste
smoked paprika, garlic powder and cayenne optional, just a pinch of cayenne

Method

1
Cut and soakCut the sweet potatoes into even sticks 6–10 mm (¼–⅜ in) thick. Cover with cold water and soak for 30–60 min.
2
PreheatFor the oven, preheat to 220°C (200°C fan) / 425°F while the fries soak. For the air fryer, set it to 200°C / 390°F and preheat if your model requires it.
3
Dry and coatDrain the fries and pat them completely dry with a clean tea towel. Toss with the oil, cornflour, salt and any spices until lightly and evenly coated. For a garlic-only seasoning, use just garlic powder with the salt.

4
Air fryerSpread the fries in a single layer in the basket with space between them. Air fry until browned at the edges and tender in the centre, about 18–22 min per batch, shaking or turning halfway. Cook in batches if the basket is small.
5
OvenSpread the fries in a single layer on a baking tray lined with baking paper, leaving a gap between them. Use two trays if needed. Bake until browned underneath and tender in the centre, about 25–35 min, turning the fries and swapping the trays halfway.
To serve
6
Serve hotServe straight away, while the edges are crisp.

Notes

  • Great results just with garlic powder as the spice
